Sillyflatt Farm in Inverberie is run by third generation farmers, Ailsa and Jan-Georg Van Rooyen. With a passion for food, animals, growing and sustainable living, Ailsa and Jan-Georg are busy reinvigorating their traditional family farm. They rear free range geese, and produce small scale veg, cut flowers, goose eggs and herbs. Ailsa specially grows tomatillos, bright green Mexican husk tomato variety, every year for our restaurant. When in season, Sillyflatt tomatillos feature in many of our fresh salsas.
