I enjoy sourcing and using wonderful produce from quality local producers, however there are key speciality ingredients that are unique to my home country that I import in too, to ensure I give you the most authentic Mexican culinary experience.
These include Chayote (similar to Squash which I use in many of my vegan dishes), Jicama (looks like a turnip but tastes like an apple, great palate cleanser), Cactus (a Mexican stable full of nutrients) and Mexican oregano (used liberally!).
