Marienne and I went mushroom hunting yesterday and returned with a large haul of chanterelles and ceps.
Luckily we have lots of ancient forests to explore near us in South Aberdeenshire and Angus. Along with Mexican food, we are big lovers of Italian cuisine so I had to make my family one of our favourites dishes, mushroom risotto for dinner! ?
I love to preserve my mushrooms using my dehydrater the squirrell away my foraged ceps for the winter. A real chef’s treat!
